Having
a light, slightly sweet and herbaceous flavor, the delicate unfermented
liquors of Green Teas are closest to the taste of the tea leaf in
its natural state. The manufacture of green tea involves a process
of steaming which arrests fermentation, followed by a gentle process
of drying. The drying, unlike the black tea process, is carried
out manually in heated aluminum pans.
Our range of Chinese Greens emanate from small ‘cottage industry’
gardens located in the deep interiors of Gaungxi and Langzhou provinces.
Many of these are teas very rarely seen by outsiders.
Included in this range are a couple of Green CTC Teas. A rare marriage
of two diverse cultures in one single cup.
