The term
"White tea" refers to a unique form of tea. Specially
harvested terminal buds are very lightly withered prior to being
steamed followed by natural process of drying in the sun. Harvested
in the cold of earliest spring when the tea bushes have just begun
to awake from their winter hibernation, the delicate buds of the
‘first flush’, endowed with a fine white pubescence,
are among the most carefully plucked and processed of all teas.
Our ‘white’ emanates from Anhui province which was,
in days gone by, the exclusive preserve of the Chinese Royal court.
